  • 1 lb fresco chicken sausage, casings removed
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 can diced tomatoes


  1. In a LARGE skillet, heat olive oil over medium high.
  2. Add sausage and cook, breaking it up with a wooden spoon, until NO LONGER PINK.
  3. Add bell peppers, onion, and garlic. Cook until softened.
  4. Stir in tomatoes with their juice. SIMMER 10 minutes.
  5. Serve sausage and peppers mixture over rice or pasta. Garnish with Parmesan!

Sausage and Potato Skillet


  • 1 lb fresco chicken sausage
  • 1 lb baby potatoes, quartered
  • 1 cup chicken broth
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 1 tsp red pepper flakes (optional)


  1. Add olive oil to SKILLET and brown sausage until NO LONGER PINK. Transfer to plate and set aside.
  2. Add potatoes, garlic, rosemary and red pepper to skillet. Cook 5 minutes.
  3. Pour in broth, cover and SIMMER 15-20 minutes until potatoes are tender.
  4. Return sausage to skillet and COAT with sauce. Serve hot!
