  1. In a LARGE skillet, heat olive oil over medium high.
  2. Add sausage and cook, breaking it up with a wooden spoon, until NO LONGER PINK.
  3. Add bell peppers, onion, and garlic. Cook until softened.
  4. Stir in tomatoes with their juice. SIMMER 10 minutes.
  5. Serve sausage and peppers mixture over rice or pasta. Garnish with Parmesan!

Sausage and Potato Skillet

Ingredients:

  • 1 lb fresco chicken sausage
  • 1 lb baby potatoes, quartered
  • 1 cup chicken broth
