Low Carb Meatballs in a Slow Cooker

We love to serve easy low carb meatballs at parties and barbecues…

Sometimes we put them in the slow cooker and let them cook…

…with our favorite sauce – one jar of keto-friendly marinara sauce and one jar of salsa.

Here’s how to cook keto meatballs in a slow cooker:

  • Put 28-32 ounces of your favorite keto friendly tomato based meatball sauce (or 1 jar of keto friendly marinara sauce + 14 ounces of your favorite salsa) into a slow cooker.
  • Submerge each meatball in the sauce. For 6 hours on low or 4 hours on high, cover and cook.
  • Since not all slow cookers are created equal, make sure the meatballs are at least 160 degrees Fahrenheit or that there are no pink spots.
  • It is fine to keep these low carb meatballs warm on the warm setting, but be sure to give them a stir before serving.

Ingredients:

  • 1 lb. 93% lean ground beef (or pork, chicken, or turkey) ½ cup almond meal (or omit the almond meal and add an additional ¼ cup of Parmesan cheese)
  • ¼ grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 tablespoons dried parsley
  • 1 egg

Instructions:

  • The oven should be preheated to 375 degrees.
  • Set aside a 13×9-inch baking sheet lined with parchment paper.
  • Mix all ingredients in a large bowl. Shape the meatball mixture into 24 (1 11/2-inch) meatballs. On your baking sheet, space meatballs 1 inch apart.
  • Cover and bake uncovered for 18 minutes or until the internal temperature reaches 160°F.
  • Warm with your favorite keto-friendly sauce.
