1 tsp quatre epice

250ml of white wine

4l lamb stock, dark


Couscous

100g of couscous

1 tsp sherry vinegar

50g of golden raisins, soaked

50g of piquillo peppers, deseeded and diced

50g of flaked almonds, toasted

2 tbsp of mint, chopped

2 tbsp of coriander, chopped

lemon juice

For The Preserved Lemons

4 unwaxed lemons

750g of caster sugar

500ml of water

1/2 star anise

1 garlic clove

1/2 vanilla pod, scraped

Rose Harissa

350g of red pepper, cut into 1/4 and deseeded

200g of red chillies, fresh

4 garlic cloves

olive oil

2 tsp ground cumin

1 tsp ground coriander

1 tsp smoked paprika

1 handful of rose petals

10ml of red wine vinegar

1 tbsp of sugar
