My mom really loves Panini and we ate focaccia Panini almost everyday. ..

ut people can get bored if we eat the same thing almost every day…

But I don’t want to make my mom sad by telling her to stop the obsession with Panini…

I think we just need a new variation of focaccia Panini.

Focaccia bread is a flat Italian bread similar to pizza dough. It’s recognized by small indents, that are usually found on the top of the bread.

Let’s understand the language first: the proper sandwich translation is panino…

…meaning little bread. The word panini is therefore only the plural.

Now let us talk about the panini we make with what bread

Rosetta is the most popular bread, meaning a tiny rose that…

…looks like a rose from the top. It is generally semi-hard and inside soft.

Focaccia or cyabatta bread may be other types of bread…

Otherwise we could talk about regional bread for hours and hours….

Then we use a filling like in other parts of the world…

And with a maximum of 2-3 ingredients we like a rather simple filling…

Filling types are the most popular:

  • Cold Cuts: Italian cold cuts extend from the most well-known such as Parma Ham and Salami to the most traditional and less known regional variety such as Mortadella from Bologna, Bresaola from Valtellina, Nduja from Calabria.
  • Cheese: Italians love cheese and, when choosing a filling, something like Parmesan Shaving, Mozzarella, Pecorino, Ricotta are all in, along with many other regional varieties.
  • Vegetables: We add some vegetables as filling, either in the form of veggies preserved in oil, such as mushrooms, artichokes, peppers, sun-dried tomatoes or as fresh produce such as tomatoes and arugula.

Panini has no widespread use in Italy of spreads, sauces and so on…

Perhaps we’ll let a little bit of mayo. We prefer high-quality ingredients…

…to avoid enriching or adding any sauce.

The first recette is the most delicious because I used Mortadella…

…a typical Italian cold cut. Mortadella is made in Emilia Romagnia…

…around Bologna precisely, and pistachios are available in the tastiest variety.

It’s like butter in your mouth, it’s tender and delicious…

…but it is a delicacy to try in small quantities and from time to time.

I used 2 slices of mortadella and a few artichoke hearts…

…preserved in oil for preparation of this panini.

Rosemary Focaccia Bread With Bresaola, Mozzarela And Arugula

This is a healthy choice because of the air-dried, very lean beef cut in Bresaola….

Bresaola is manufactured in the Lombardy valley of Valtellina…

…approximately 200 km north of Milan. I used fresh cow mozzarella for mozzarella.

To give a green touch, I add some Arugula. This combination…

…will give you a salty bresaola taste, a soft creamy mozzarella texture…

…and a peppery arugula note. Tip: EVOO brush bresaola before your sandwich is filled.

  • You will need to swap the mortadella with chicken or turkey if you are halal. All the others can be eaten without restriction.
  • Go for the Focaccia Panini #3 if you are a vegetarian. If you are vegan, you can replace the ricotta with a vegan spread.
  • You can swap the focaccia for a gluten-free version if you’re following a gluten-free diet.
  • In case you do not want to bake, you can buy focaccia bread or ciabatta bread.

If you serve these sandwiches as an aperitive, you can pair them…

…with a Classic Aperol Spritz. Prosecco is also a good choice…

as it will quench your thirst and prepare your palate for the next bite.

Instead, I suggest pairing the #1 with a Lambrusco…

Lambrusco is a typical wine from Emilia Romagna…

slightly sparkling and best enjoyed at 60 F° or 15 C°…

Cherry and cream notes blend perfectly with the richness of Mortadella…

Summer is the best time to enjoy its slight fizziness…

You can also buy Sardinian Carignano di Sulcis labeled as Carignan in France,..

…which is easily found. It offers umami flavors that pair well with Bresaola.

This is equivalent to the one in Focaccia Panini # 3, where the floral note..

…of Jasmine and citrus notes will balance the creaminess of the ricotta..

..and sweet mellowness of the apricots and honey. Since I am homesick,

I am partial to this wine. Any rose wine will do!
