  • Egg: In most of my recipes, including this one, I use large eggs.
  • Kosher salt and black pepper: If you’re using fine salt, cut back on the amount you use or the dish will be overly salty.
  • Spices: Dry thyme, garlic powder, and onion powder Check to see whether they’re still fresh! A dish might easily be ruined by a stale spice.
  • Lean ground beef: In this dish, I do not recommend using extra-lean beef. In some recipes, it works nicely, but it’s too dry for this one.
  • Almond flour: I use blanched almond flour that has been finely milled. I haven’t tried using coarse almond meal yet, so I’m not sure how well it would work.
  • Parmesan: Use finely grated parmesan rather than coarsely shredded.
  • Unsweetened ketchup: It’s available at Whole Foods and on Amazon. Because we’re only using a small amount, it won’t make a difference if you use standard ketchup. You can certainly leave it out entirely, however I think it adds a lot to the dish.

  • In a mixing dish, whisk together the egg, salt, pepper, and spices.
  • The ground beef, almond flour, and parmesan cheese are then added. To combine, gently mix everything together.
  • Form the ingredients into a loaf and set it on a rimmed baking sheet coated with foil. To assist form the meat mixture, I like to use a small loaf pan.
  • Brush the top of the loaf with ketchup, then bake for 50-60 minutes at 350°F until it’s done. Remember to let aside for 15 minutes before slicing.
