When I developed this recipe before I had an ice cream maker…

…but it is incredibly easy to make and requires no fancy gadgets.

There’s no sugar or eggs needed, but you’d never know. The texture is smooth…

The Ingredients For Keto Ice Cream

  • Heavy cream is sometimes known as thickened cream or double cream. If you use reduced fat or light cream, the ice cream will not set as well as you want it to.
  • Powdered sweetener– Any keto granulated sweetener in powder form. Instead of buying the pricey boxed solutions, I make my own. Sweeteners like xylitol, erythritol, and monk fruit sweetener are all excellent choices.
  • Xanthan gum– thickens and provides the ice cream a scoopable texture.
  • Vanilla extract– This is optional, but only if you want to make the traditional vanilla flavor. Other flavor extracts can be substituted.

The Instructions

  • Combine all the ingredients in a deep and wide jar and mix gently.
  • With an immersion or stick mixer, blend the mixture until it has thickened and soft peaks have formed.
  • Make sure to stir the jar every 40 minutes while it is in the freezer so it doesn’t ice up.

Tips to Make The Best Keto Ice Cream Recipe

  • Add 1 tablespoon vodka to the mixture to make the ice cream creamier and easier to scoop. Alcohol is not present in ice cream.
  • Regular stirring is necessary to prevent ice formation.
  • Instead of freezing it, you can use an ice cream maker. If you choose this option, double the ingredients.

Keto Ice Cream Flavor Variations

  • Chocolate– Add 3 tablespoons of unsweetened cocoa powder to the mixture.
  • Strawberry– Add 1/2 cup of sliced strawberries and 1/2 teaspoon of strawberry extract.
  • Mint chocolate chip– Replace the vanilla extract with peppermint extract and fold through 1/2 cup sugar free chocolate chips.
  • Butter pecan– Add 1/2 teaspoon butter extract and 1/4 cup chopped pecans.

Serving and Re-freezing Keto Ice Cream

If your ice cream is too icy once removed from the freezer, microwave it for 15 seconds or let it sit for 15 minutes.

If the ice cream is re-frozen, it will become icier. In the event that you have leftovers and need to refreeze them, place them in a new container and store them in the freezer for up to one month.


Instructions

  • Mix all the ingredients in a deep and wide jar. Beat everything together until it thickens and soft peaks form.
  • To prevent it from becoming too icy, cover the jar and place it in the freezer for at least four hours, stirring every 40 minutes.
  • Serve the frozen food after 15 minutes of letting it sit in the freezer.
