What Is A Shrimp Deveiner Used For?
There are two main purposes for using a shrimp deveiner; firstly, it helps remove the shells by making quick shallow incisions along each side of the body of the shrimp. Secondly, it allows us to get closer to the meat itself to ensure we are able to peel away the skin completely. In both cases, once peeled, the flesh remains intact and ready to eat.

How To Use Shrimp Deveiner
Shrimp deveiner is easy to use! Here’s how to do it
- Simply lay the deveined shrimp in a pitcher of cold water. This keeps the shrimp flavor as strong as possible during the deveining process. Keep another pot of cold water handy for deveined shrimp. Clean exposed veins away in a well-lit area near a cold running water supply.
- Rinse the deveining tool well. Deveining previously peeled shrimp is most easily accomplished using a non-serrated deveining knife. Shell-on shrimp can be deveined by penetrating through the rear shell with a serrated variant. With a rounded serrated blade and a rounded non-serrated blade, bowed seafood deveining shears can peel and devein shrimp in one movement.
- If peeling is required, separate the top of the shrimp. Split the shell along the back of the shrimp with the deveining knife blade. Pinch the legs and slide it away from the shrimp flesh to remove it. Leave the tail on or remove it.
- Take hold of the deveining knife with the rounded tip pointing down. Keep the chilled shrimp in one hand and the peeled back up. Using the rounded smooth tip of the instrument, divide open along the vein line, using the hook of the shrimp flesh as a model. Raise the tooltip or your hand to extract the shown string-like vein. Place the deveined shrimp in the freezing water. If the shrimp has never been frozen, the vein can be readily removed with cold running water.
- Devein the shrimp while it still has its shell on by inserting its vein line into the rear of each at different locations. Pierce the shell and shrimp flesh with the serrated tip of the deveining instrument. Using the top, catch the vein and stretch it out in each location until it is gone.
- Using a scissor-style shrimp deveining equipment, peel and devein shrimp at the same time. To open the vein with the shrimp’s back, separate the head and hold the body hard by the tail and legs.
- Slip the lower curved non-serrated blade under the shell sleeve at the shrimp’s head and collectively release the grips while moving the scissors towards the tail. This will split the flesh open and slice the shell open at the same time, allowing you to easily remove both the vein and the shell.
