This recipe calls for 85/15 ground beef, the perfect fat-to-protein ratio.

There are usually recipes that call for 80/20 or 90/10, but we’ve tried both…

…and weren’t satisfied with the results. Most grocery stores carry 85/15.

Go with 90/10 if you’re forced to make a choice.

The 80/20 ground beef will result in a lot of fat dripping out…

…of your meat loaf when you make this recipe.

While I may be a purist, ground turkey and ground chicken…

…are big no-nos for me. They will come out very dry in this recipe…

…because they are too lean. You can find more information…

For our keto meatloaf, we’ve had the best luck using ground chuck…

…but other variations work well too. A lot of good information…

…is provided in the write-up regarding saturated fat, cholesterol…

…and different nutrient contents of ground beef.


Combine Your Ingredients

The rest of your ingredients, including an egg (we always use large eggs)..

..should be placed in a mixing bowl and mixed with your hands.

You can’t make meatloaf without using your hands…

It takes just 10 minutes to prepare the meatloaf mixture…


Prepare For The Oven

For this recipe, we’re going to preheat the oven to 375 degrees….

Some recipes recommend setting the oven to 350 degrees…

…but we’ve had better results with a slightly higher temperature.

Form the meatloaf mixture by hand on a baking sheet or place…

…the mixture into a greased loaf pan. Press the keto meatloaf completely…

…into the pan and then flip it over onto a baking sheet before baking.

A loaf pan is not the right place to bake meatloaf!


Bake! Then Top with Ketchup Mixture

Cook the low-carb meatloaf for 20 minutes in the oven…

We will be able to cook in half the time we planned….

After the meatloaf has cooked for 20 minutes…

…we will top it with the ketchup mixture.

Different people prefer a ketchup flavor on their meatloaf…

…or something a bit sweeter and spicier, closer to barbecue sauce.

In general, I prefer the latter…

The tomato base can be made with sugar-free ketchup…

…reduced sugar ketchup, or tomato paste. In this recipe…

…we’re going to use tomato paste because it has the strongest…

…tomato flavor while having the fewest carbs.

Finish the tomato glaze by adding vinegar, Worcestershire sauce…

…and optionally a few drops of liquid stevia.

Stevia adds a nice sweetness to the meatloaf recipe.

When the meatloaf comes out of the oven…

…top it with this sauce and then return it to the oven for the remaining 15 minutes.

Allow To Cool & Enjoy!

Test the internal temperature of the keto meatloaf…

…with a meat thermometer after the meatloaf…

….has been in the oven for 35 minutes.

Make sure the internal temperature reaches 160 degrees…

…but keep in mind that the internal temperature will continue…

…to rise once you remove it from the oven.

A temperature of 155 degrees is ideal…

Let the keto meatloaf cool for at least 1 minute before slicing…

…or else you will lose a lot of juices.

I say this because it all depends on the ingredients you use!

A replacement for breadcrumbs like ground pork rinds has zero net carbohydrates,..

…while almond flour has anywhere from one to three net carbs per serving.

Carbs can also be found in any diced-up veggies you add…

…to the keto meatloaf before baking.

This will likely come in the form of onion and celery…
