Cooking meats at high temperatures, with or without a blackened char, produces polycyclic aromatic hydrocarbons (PAHs) and heterocyclic amines, which are potentially carcinogenic chemicals (HCAs). These are developed as a result of alterations in the muscle fibers and the combustion of the drippings produced by cooking the meat.   1. The main reason is that smoking has been associated with increased levels of PAHs. However, there’s some controversy over whether this really is true. It could just be that people who eat smoked foods consume more meat, which increases their exposure to those chemicals.
