The story of Madeline
In Brazil there’s not much climate change when you live in Sudeste…
…like me in Sao Paulo. My mother is Mexican and my father is Italian.
So I have a mixed culture of both worlds. Sometimes they may even make…
…salsa sauce from their own tomato plants.
My mother always cooked well both Spanish and Italian.
Little did I know during my mothers’ accident and illness..
my father cheated on another woman,
so I decided to run away and make myself a chef..
…of a restaurant, and made my mother’s cooking to remember her.
Such a story right! However, let’s stop mourning…
Now let’s choose tomatoes for salsa!

… is an heirloom tomato that has been maintained for centuries among
…Amish villages. It has a deep tomato taste concentrated…
….in its meaty walls, and it averages 8 to 12 oz, which is larger than many…
… Roma tomato types. While the majority of Amish Paste tomatoes
…are plum-shaped, they do occasionally develop into little ox hearts.
Amish Paste tomatoes have enough flavor to be used for slicing…
…and salads, but they shine in salsas, sauces, and pastes.
Unlike many paste tomatoes, this one is indeterminate,
which means it will continue to produce until
… the first deadly frost. This is a high-yielding cultivar.

…tomato on the list with a cult following.
These are the same San Marzano tomatoes that cost 3-5 times…
…as much as normal canned tomatoes at the supermarket store.
These tomatoes produce abundantly on indeterminate vines,
….with clusters of long plum-shaped fruits.
San Marzanos are slimmer than normal Romas,
…but they compensate by having more meat per fruit.
Prized for their excellent flavor, San Marzano tomatoes
…are sweeter and less acidic than normal Roma tomatoes.
They have thicker flesh and fewer seeds than regular tomatoes,
…making them ideal for sauces, sun-dried tomatoes, and,
…of course, salsa. If you prefer your salsa with a lot of tomatoes,
… the taste of San Marzanos truly shines through.

…big grape tomatoes with an abnormally elongated form that resembles tiny Romas.
Because of its robust growth, sweet flavor,
….and exceptional crack resistance, Juliet was named
an All-America Selections winner in 1999.
They also develop quickly, sometimes in as little,…
like 60 days, and produce regular, large harvests of fruit,
…with just two plants producing over 100 tomatoes.
Juliet is a popular choice among market producers and home gardeners alike.
Juliet tomatoes may be used in a variety of ways.
You may use them in salsas and sauces, slice them into salads,
sundry them to make small tomato-raisin umami…
…bombs of taste, or simply eat them fresh from the garden.
For cherry or grape tomato fans, this is a highly recommended variety.
Tomatoes to Avoid
Some varieties of tomatoes are better cut on a sandwich than in salsa.
Many big heritage tomato types, for example,
are rich in moisture and have a lot of seeds.
While such characteristics make for a delicious tomato,
they aren’t ideal for salsa-making.
However, the finest tomatoes for salsa are the ones…
…you already have on hand. You can make do with whatever
…tomatoes you have on hand, even if they are watery and seedy.
Simply slice them and use a spoon or your fingers to scoop out..
… the juice and seeds, cut the rest, and drain in a strainer.
Canned Tomatoes? Why Not?
Yes!m While salsa prepared with canned tomatoes…
…may not be as spectacular, subtle, or nutritious as salsa made…
…with fresh tomatoes, it’s still salsa and convenience has its advantages.
If you go this way, use a can of fire-roasted beans,
…and be sure to drain them thoroughly before continuing with your dish.
Homemade Salsa Recipe
Fresh tomatoes make the finest salsa, which is a fact. Okay,
that’s just my perspective, but I used to think I could get away
with using only canned tomatoes, but fresh tomatoes…
…make all the difference! Salsa is best made with fresh tomatoes,
…especially when they are well-ripened and in season.
This is, without a doubt, my favorite salsa recipe,
and I doubt I’ll ever need another. It just has the ideal proportions
…and balance of ingredients.
It’s not too oniony or garlicky, and it’s not too spicy for my kids;
it doesn’t taste canned, and the fresh lime adds just..
…the proper amount of brightness.
The cilantro, as well as a touch of chile pepper and cumin,
…give it a typical Mexican taste.
If you’re using store-bought tomatoes,
I’d say the sugar is just necessary. The quality is higher…
…and they’re a little sweeter if you cultivate your own
,,,or purchase them at the farmers market, so the sugar isn’t necessary.
Combine all ingredients in a food processor…
…and pulse in 1-second bursts until all ingredients are finely chopped.
Serve with tortilla chips. Note that salsa always tastes…
…best after it’s been refrigerated for a few hours,
so if time allows let the flavors marinate together before serving.
Store in refrigerator for up to 1 week.
