Shapton Water Stone Knife Sharpener
We love this product since it is more practical and has great packaging. Moreover, it doesn’t require soaking to use!
This is a great set and most likely all you need. I had been using diamond stones for a while and only had limited experience with water stones. Diamond stones are great, very fast and leave an agressive edge but tend to leave a very visible scratch pattern on the edge. It’s not so noticeable on higher grits but very noticeable on the coarser stones. This Shapton set includes a 500 grit stone which works very well to reprofile an edge, it just does not work as fast as a 220 or 325 diamond stone.
However, it leaves a very polished edge which you can then refine to a mirror polished edge with the 2000 and 16000 grit stones in the set. I could not be happier with these stones. How to Sharpen a Knife with A Stone for Beginners
Wetting the Stone
If you have a whetstone that has to be moistened….
…first immerse it in water until no more air bubbles emerge.
You’ll be better off soaking for a longer period of time….
During the sharpening process, make sure to moisten the stone…
…every now and then. Slurry is made up of water and whetstone particles.
During sharpening, the slurry does the majority of the work….
Don’t saturate the stone entirely because this will wash the slurry away…
…only a few drops here and there will suffice.
Finding the Angle
If you’ve done any research into blade sharpening…
…you’ve probably come across the term “edge angle.”
The angle, in essence, determines how “pointed” the edge is…
…the smaller the angle, the more pointy the edge.
Pointy edges are useful for cutting objects…
…but they aren’t particularly long-lasting. Less pointed edges, on the other hand…
…aren’t as good at cutting things, but they’re far more durable.
(Re-)Defining the Edge
Aside from being potentially dangerous, dull blades…
…are also extremely inconvenient to use. The next (and possibly most crucial)…
…step in acquiring a razor sharp knife is to re-define…
…the edge once you’ve prepared the stone and set your angle.
Polishing the Edge
Although this procedure does not actually polish the blade…
…it is the best description we could come up with.
Again, ideally, you’d have a selection of 4-6 different stones…
…of varying grit that you’d progress through. However, if you’re a newbie…
…you’ll want to switch to the finer grit (6000 side) and repeat the process…
…work down one side of the blade, flip the blade, and work down…
…the other side of the blade. Proceed to the next step after this is completed
Honing the Edge
Hone the blade using that nice honing steel that came with your knife block…
…and that you assumed was a knife sharpener. Pass both sides of the blade…
…along the honing steel 2-3 times, maintaining the same angle as in step 2.
This will help to align and smooth out the blade….
