Let’s hear Hanna’s story….
We made these Keto No Bake Cookies for the first time a couple weeks ago…
These were easy and delicious, and we were hooked!
Next, we decided to make a low carb version of peanut butter cookies…
A simple classic…and surprisingly, you don’t need to make too many changes…
…to make them keto-friendly! Keto peanut butter cookies are sugar free…
…gluten free, flourless, dairy free, and high in protein.
Yeah, I know…sounds like they would be flavorless too!
Try two tablespoons of peanut butter. The fats found in it, along with fiber and protein are just what you need to stabilize insulin levels and ensure a constant energy supply for hours.
Peanut Butter Benefits
Let’s start from basic…
What Kind of Peanut Butter is Best for KetoPeanut Butter Cookies?
Peanut butter can either be creamy or crunchy in this low carb cookie recipe….
Both options will work just fine; crunchy peanut butter…
…will give these cookies a more dynamic and crunchy texture…
…than creamy peanut butter.
Peanut butter will give them a chewier consistency…
Make sure your peanut butter doesn’t contain added sugar or salt…
…by reading the nutrition label. Choosing a natural peanut butter…
…may result in some oil separation in the jar.
Be sure to stir the oil well into the peanut butter…
…before adding it to your cookie batter.
There are a number of peanut butters available on the market…
…including Skippy, Jif, and Crazy Richards. You need to pick the right…
…peanut butter for a keto diet and overall good health.
Make sure you buy natural peanut butter.
There isn’t an equal amount of natural peanut butter on the market…
We’ll discuss what to look for in peanut butter…
…as well as if you can eat peanuts on a keto diet.
What if you’re allergic…
What Can I Use Instead of Peanut Butter in a Recipe?
If you cannot tolerate peanuts, you can substitute almond butter…
….or cashew butter for a similar texture. Although I have not tested sunbutter…
…in this keto cookie recipe, if you use it, you may see similar results…
…due to the peanut butter-like texture of sunbutter.
Keep going!
What is The Best Low Carb Sugar Substitute for Baking?
This easy low carb cookie recipe uses Swerve Confectioners…
Each cookie is created to closely mimic the consistency of sugar…
…so it practically melts into the batter to create a rich and decadent taste.
If you prefer, you could also use Lakanto powdered sugar…
…or your local grocer’s store brand confectioners sugar replacement.
What Can I Substitute for Eggs in Keto Peanut Butter Cookies?
The flax egg is one of my favorite options for replacing eggs…
in baked goods recipes. Ground flaxseed and water…
…when mixed together and allowed to sit for a few minutes…
….form a jelly-like substance that resembles egg whites.
Because ground flax is packed with nutrients such as…
…Omega-3 fatty acids and dietary fiber, it is ideal for keto baking.
If you want to replace the three eggs in this peanut butter cookie recipe…
…mix 2 tablespoons of ground flaxseed with 5 tablespoons of water…
…then let the mixture sit for 10 minutes to become gel-like.
Add the flaxegg to the keto peanut butter cookie doug…
… when the recipe calls for eggs.
How to Make Keto Peanut Butter Cookies
- Stir together the peanut butter, sugar, vanilla bean, egg, and salt in a large bowl.
- Blend the ingredients until they are smooth and well combined.
- Roll or drop cookies onto your cookie sheet in 2-inch balls, 2 inches apart.
- Using an oiled fork, crisscross the cookies. Bake the cake as directed.
Why Do Peanut Butter Cookies Have Fork Marks?
If you’re a peanut butter cookie lover, you’re probably used…
…to seeing the trademark crisscross pattern on just about…
…every keto peanut butter cookie. However…
…those fancy fork marks aren’t just for show.
Using a fork to flatten your keto peanut butter cookies…
…will allow them to bake more evenly.
Therefore, peanut butter cookies crisp up beautifully…
…on the outside while maintaining that delightfully moist…
…chewy texture on the inside.
