that my kids learn to love Indian cuisine as we did as kids. What should I do?

Indian food, specifically chapati, is something I make 2-3 times a week..

Chapatis are made using a soft dough comprising wheat flour, salt and water. It is more finely ground than most western-style whole wheat flours.

How to Make Chapati Dough Using KitchenAid Stand Mixer?

The entire wheat flour and water is all that you need to make roti dough…

…(also called chapati or phulka). All of them are almost the same…

…with a few minor differences. Roti and chapati can be interchanged…

…Tawas (concave pans or griddle) are used to cook them.

Phulka is cooked on a tawa one side, and on an open flame the other….

As a result of the high cooking temperature, air is trapped inside the roti…

…causing it to puff up. In this recipe, I will show both variations.

Salt and some oil can be added, but these are entirely optional…

I got a stand mixer of 4.5qt Kitchenaid. Five sqt and 6qt are also popular sizes…

Dough from 2 cups of flour can be made in the 4.5qt mixer….

You might need at least 3-4 cups in larger sizes….

I usually use 1 cup of water for 2 cups of entire wheat flour….

The 2:1 ratio is ideal for the Aashirwad Aata that I use….

You may need to adjust the amount of water…

…if you are using another brand of wheat flour.

That said, start with a smaller amount of water…

…and then adjust the dough as necessary.

Start with approximately 3⁄4 cup and add more when necessary….

Use the dough crochet always and place the dough at the lowest speed…

Stop and scrap the sides if necessary to include all the connection…

You can add a teaspoon of oil when the dough is almost combined…

….(or you can do it at the end with your hands too).

Once the dough is formed, the bowl of the mixer is almost clean….

Pick up your dough to make sure it is soft and foldable…

…and press your fingers against it. It should leave an impression…

…when you press your finger against the dough. Roti Dough…

..can be stored in an air-tensioned container in the fridge for up to 2 days.

You can freeze it to store it longer. You can split the dough…

…into small amounts and store it in ziploc bags or freezer safe containers on time.

Thaw in the fridge for use overnight…


Tips For a Perfect Chapati Dough

  • When making dough, always keep the stand mixer at the lowest setting.
  • The amount of water you use for making the dough can vary based on the quality and the thickness of flour used (Punjabi’s often use coarse whole wheat flour). So start with a little less water, and add more as needed. Once you have figured out the perfect amount of water, it is okay to add it all at once.
  • Check that the dough is to your preferred softness. eg. For roti’s you want soft dough, while for poori’s a little less soft works better.
  • Once ready, cover the dough and let it rest for at least 15 to 30 minutes before using.
  • Using a stand mixer with a dough hook makes kneading the dough much easier.
  • If you don’t have a stand mixer or prefer to knead the dough by hand, you can do it that way.
  • When working with dough, the secret is not only in the right amount of ingredients, but also in the kneading.
  • By relaxing the gluten, rotis become softer and more pliable. Make sure the dough is the same thickness throughout the rolling process.
  • If it is thick in some parts and thin in others, it will not puff up nicely when cooked. Before adding the rolled dough, make sure your pan is hot.
  • Ensure that it cooks evenly by doing this. Roti should not be overcooked or they will be tough. Once cooked, brush them with ghee or oil to add flavor and to keep them soft.

Note When Making Chapati Bread

It might seem as though the dough needs water just prior to baking…

…but hold off before adding too much water.

Dryness usually isn’t due to a lack of water…

…but simply needs to be kneaded for an additional minute.

Wait a few minutes, and if the dough still does not come together…

…you can add water a couple spoonful at a time.

Using the method outlined above gives me the best results…

…but feel free to modify it to fit your needs.
