Peeling and Shelling Shrimp

- For shrimp, remove the shell and legs if they’re attached to the tail before breaking off the tail’s shell and leaving the tail in place.
Figuring Out Shrimp Sizes
Shrimp are sorted by size and assigned a number both on the boat and at the plant. This figure informs you of the approximate number of shrimp included in one pound.
