Making Keto Tortilla Chips
- Mix the flours and spices together in a large bowl before making the chips.
- Now, microwave the mozzarella shredded. It is important to melt the cheese but not burn it. Mix it well with the dry ingredients.
- Knead the dough until it is uniform in consistency. During the melting process, if the dough becomes too stiff, you may need to heat it for 10-15 seconds.
- Using a clean surface, roll out the dough thinly after it has been kneaded. There shouldn’t be much difference between normal and thick chips.
- Bake for 12-15 minutes at 350 degrees with the dough cut into chips. Allow the chips to become golden all over by flipping them halfway.
- Before eating, let the chips cool a bit so they can crisp.
2 Ingredients Keto Chip
The Ingredients
- Almond Flour– To create the crisp and light texture, you must use blanched almond flour. Almond meal makes the chips denser and easier to break apart.
- Mozzarella Cheese– You can buy pre-shredded mozzarella or shred your own. Other types of shredded cheese (e.g. delicious cheese, cheddar cheese) have a higher fat content and will result in a greasy finish.
The instructions
- To begin, place the almond flour in a large mixing basin. If you’re using any other spices, toss them in here as well.
- Then, in a microwave-safe dish, melt your mozzarella cheese for 1.5-2 minutes. Pour the melted cheese over the almond flour and stir well until you have a thick dough.
- On a kitchen counter, spread out a wide sheet of parchment paper.
- Place the dough ball on top and lightly flatten it. Cover the top with the second sheet of parchment paper and push down.
- Roll out the dough with a rolling pin until it is approximately 1/4 inch thick.
- Next, cut out little triangle forms using a sharp knife or pizza cutter.
- Bake the tortilla chips for 12-15 minutes, or until golden brown around the edges, on a prepared baking sheet. Allow to cool completely on the baking pan.
