On weekends, I used to mourn the loss of my toasted bagel…

a thick layer of cream cheese, and a potent cup of coffee.

Since I started the keto diet, I stopped eating bagels for a while. That’s it!

Keto bagels like these are amazing. The dough is soft and the cookies are delicious.

I can’t believe I found such a miracle dough.!

Ingredients for Keto Bagels

My recipes for keto bagels are usually pretty flexible and I include notes…

…regarding substitutions. Coconut flour is combined with almond flour in this recipe…

…and the result was a wonderful texture.

Here is what you will need to make Keto Bagels:

  • Mozzarella cheese
  • Cream Cheese Almond Flour Coconut Flour
  • Baking Powder
  • Whole Egg
  • Egg Whites Everything seasoning

How do you make Low Carb Keto Bagels?

You must first measure out and prep your ingredient…

… in order for this recipe to come together smoothly. Add the almond flour…

…coconut flour, and baking powder to a bowl and mix well.

Then, beat an egg white until it triples in volume (see photo)…

This is important to give the bagels a good rise…

The bagels are made with a “fat head dough” base…

The shredded mozzarella cheese and cream cheese are heated…

…until completely melted. Mix the dry ingredients…

…with the melted cheese after it has been stirred until smooth.

What is fathead dough? It’s a type of dough made with a varying type of flour (not wheat) and is also gluten free and low carb as well. Eating fathead dough still allows you to enjoy eating bread, while not having to worry about the carbohydrates that come along with typical wheat bread.

Add the egg and beaten egg white next. Stir the dough well…

…and then work it with your hands until it becomes soft.

After that, you will need to form a disk, cut it into eight sections…

…and then form eight bagels. Each one should be brushed…

…with one more egg white and then seasoned to taste.


What Toppings Do you Add to Keto Bagels?

Toppings include Everything seasoning, sesame seeds, sea salt, or poppy seeds.

You can also dust with cinnamon sugar using brown sugar monkfruit or Swerve.


How do you make Keto Breakfast Sandwiches?

Slice the keto bagels and toast to make bagel breakfast sandwiches…

Put cooked egg, bacon, sausage, or ham on the bagel. If you wish…

…you can add spinach, avocado, or tomato. If you prepare these ahead of time..

…simply reheat them in 30 second increments in the morning.

Tips for the Best Low Carb Keto Bagels

  • Before you begin, measure everything out and prepare it. Due to the cheese base in the dough, this is imperative. You will have a hard time combining the dough if the cheese cools too much.
  • Beat the egg white thoroughly and do not skip it. In case you are not sure what this should look like, there is a photo of my beaten egg white. By doing so, the keto bagels will have the correct texture and lift.
  • If you wish, you can use a donut pan or simply shape the bagels. Both methods worked for me and I did not notice one was better than the other.
  • Brush the keto bagels liberally with egg white to achieve that golden brown color and slightly crisp texture.

Ingredients for keto bagels…

  • 2 cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 1 1/2 cups almond flour
  • 1 tablespoon coconut flour
  • 2 teaspoons baking powder
  • 1 large egg
  • 1 large egg white, beaten until it triples in volume

For the Topping

  • 1 large egg white
  • 1 1/2 tablespoon topping of your choice (Everything seasoning, sesame seeds, poppy seeds)
  • OR a sprinkle of sea salt on top

Instructions

  • You must work the dough while the cheese is hot, so you need to measure and prepare everything ahead of time.
  • Pre-heat the oven to 400 degrees Fahrenheit.
  • Melt the shredded mozzarella and cream cheese in a microwave-safe bowl in 30 second increments. Mix until smooth.
  • Stir together almond flour, coconut flour, and baking powder in a second bowl.
  • Melt the cheese and mix it with the flour mixture. Stir the dough and work the flour into the cheese as much as you can.
  • Add the whole egg and beaten egg to the mixture and stir until a soft dough forms. Using your hands, knead the dough until the egg, flour, and cheese are all evenly distributed. You want to make sure there are no streaks of eggs.
  • Cut the dough into 8 equal sections after forming it into a disk. Make a bagel from each section.
  • In a greased donut pan or on a silicone-lined baking sheet (or on a greased baking sheet), place the bagels.
  • Brush the bagel with the egg white and top with the seasoning of choice.
  • Bake for 18-22 minutes until golden brown.

Variations and Substitutions for Keto Bagels

There are three ways to vary the basic recips:

  • As I did when making the pretzels above, season the bagels as well. Garlic powder and onion powder, for example, can be added. Each teaspoon should be 14 teaspoons. Before adding them to the mixture, mix them into the almond flour.
  • Toppings should be varied. Poppy seeds, coarse salt, or Everything Bagel seasoning can be substituted for sesame seeds.
  • Try adding 12 teaspoon of ground cinnamon and a granulated sweetener to equal 14 cups of sugar for a sweet version. Mix them with almond flour before adding it to the mixture.

Storing leftovers

It is best to enjoy these keto bagels warm and fresh…

Any leftovers can be frozen immediately, once they have cooled…

In the microwave, gently thaw them…

Since they don’t keep well in the fridge, it’s best to freeze them…

When stored, they tend to deflate and lose their fluffiness…


Sum Up

Make sure you knead the dough thoroughly before it cools…

…and make sure it is completely uniform. If the dough has cooled…

…and is impossible to knead, do not despair!

Microwave it for a few seconds (start with 10 seconds) until it’s pliable again…
