- Preheat the air fryer to 400 degrees Fahrenheit (205 degrees Celsius) for at least 5 minutes. Meanwhile, in a large mixing bowl, whisk together olive oil, garlic powder, salt, pepper, Italian seasoning, paprika, and Dijon mustard until smooth. Reserve!
- If using frozen raw shrimp, fill the air fryer basket halfway with them and cook for 5 minutes. They will be defrosted towards the conclusion.
- Using a slotted spoon, remove the shrimp and blot dry with a paper towel. Toss them in the oil/spice combination until well coated.
- Remove the water and gently pat the basket dry (use gloves to not get burned). Using tongs, arrange shrimp in a single layer, allowing space between them to cook. Continue cooking for 5 minutes longer, turning halfway through. Because the shrimp are coated in oil, there is no need to spray the basket with cooking spray.
- Serve as an appetizer or as a main meal with your favorite sauce over (cauliflower) rice noodles, asparagus, or any side of your choosing.
- If using frozen cooked shrimp, enormous (bigger than jumbo) shrimp are ideal since they will not be overdone and chewy. Thaw them for 5 minutes in the air fryer and proceed with the method above, except that you will cook the shrimp for 3 minutes rather than 5 minutes after tossing in the oil/spice combination.
- If using fresh shrimp, either raw or cooked, omit the first five minutes of this recipe and cook it already mixed in the oil/spice combination.
