I am a bakery and I really love baking! But I don’t have any good tools…

How to Mix Dough With a Mixer

Many cooks have found that mixing their own bread or pizza dough…

…is much easier than using store bought mixes. It’s not hard at all…

…if you follow these simple steps:

  1. Measure your flour into a large bowl.
  2. Add yeast/baking powder/pinch salt. Stir well until combined. If there are lumps they should disappear after kneading.
  3. Make sure water is warm enough – this means about 30 degrees C / 86F but feel free to use whatever temperature feels right to you.
  4. Once everything has been measured out add 1 cup of warm water and stir again. The mixture needs to become very wet so make sure you get rid of as many dry spots as possible before adding more liquid. You may need up to 2 cups total depending on how sticky your ingredients are.
  5. Knead by hand or machine for 10 minutes while slowly incorporating the remaining liquids. This step helps develop gluten strands which gives the final product its structure. Remember to keep rotating the ball around the sides of the bowl.
  6. After the first 5-10 minutes let the dough rest covered for 15-20 minutes then repeat process 3 times. Each time increase the amount of water added gradually. At the end of each addition incorporate the liquid completely into the dough. 7) When all the additions have been made it’s ready to shape. For best results roll the dough into balls. Flatten slightly and place onto greased baking sheets. Cover loosely with plastic wrap and allow to rise for 45 minutes – 60 minutes. Depending on ambient humidity, room size etc., you might only require an additional 20-30 minutes rising period. During this time preheat oven to 220C / 425F.
  7. Bake for 8-15 mins depending on desired colour and texture. To test doneness remove from tray and touch bottom; if golden brown slide knife through middle and check consistency. Remove when cooked. Cool on wire racks.
  8. Store cooled loaves in sealed containers or freeze for later consumption.
